Bozbash Soup

Bozbash is a traditional dish of Azerbaijani cuisine, bozbash is cooked on the basis of beef broth. The main difference between bozbash and other soups of this type is chickpeas, which are part of the ingredients of the recipe. In addition, chestnuts are placed in bozbash, which, in their absence, can be replaced with ordinary potatoes. There are several types of this dish - brocade-bozbash and kyufta-bozbash, they differ in that in the first case, there are pieces of lamb in the soup, and in the second, bozbash is cooked with lamb meatballs. There is also balyk-bozbash, but in this case lamb is not used at all - it is replaced by fish. In this case, a recipe for bozbash soup made from lamb chunks is offered.

Bozbash Recipe Ingredients

  • Lamb - 500 g
  • Chickpeas - 1 cup
  • Apples - 2 pcs.
  • Potato - 500 g
  • Onion - 2 pcs.
  • Tomato paste - 2 tbsp.
  • Oil - 2 tbsp.
  • Greens
  • Ground black pepper
  • Salt

Bozbash Recipe

Bozbash soup is prepared according to this recipe. Lamb must be washed, cut or chopped into pieces weighing 30-40 g, pour water so that it only covers the meat, and cook over low heat, periodically removing the foam. Sort the chickpeas, rinse, pour 2-3 glasses of cold water and put to boil, also periodically removing the foam. When the lamb is cooked, separate the meat from the bone and add to the chickpeas, which were cooked for 1-1.5 hours. Then pour strained broth, chopped potatoes, fried onions in oil, chopped apples, tomato paste, salt, pepper and simmer for 20-25 minutes. Serve bozbash with finely chopped greens.
