Summer borscht is a recipe for Ukrainian cuisine, one of the many borscht recipes that Ukraine is famous for. The recipe for summer borscht is quite simple and anyone can cook this delicious dish. Summer borscht is cooked in water or mushroom broth; the borscht recipe includes beets, celery, potatoes and other vegetables.

Summer Borscht Ingredients

  • Beets - 1 bunch
  • Potatoes - 3-4 pcs.
  • Celery stalk - 1 pc.
  • Carrot - 1 pc.
  • Zucchini - 200 g
  • Green onion - 50-75 g
  • Tomatoes - 1-2 pcs.
  • Sour cream
  • Carnation
  • Bay leaf
  • Ground black pepper
  • Salt

Summer Borscht Cooking

Cooking summer borscht is easy. The beets should be divided into leaves and stems, the peeled beets cut into strips or slices, and the stems into short sticks. Put the prepared beets in boiling water or mushroom broth, add carrots and cook for 1-15 minutes. Scald beet leaves with boiling water, and add to the rest of the beets.

Then add peeled tomatoes, zucchini, potatoes, celery greens, onions, cloves, peppers, salt, bay leaves to the pan with beets and carrots and cook until the vegetables are fully cooked. When serving with summer borscht, it is recommended to serve sour cream, curdled milk or boiled milk.
